Bacon Brownies

I texted a picture of brownies and a slice of bacon to my sister and her response to me was “Oh dear god. what have you done?” I’d been threatening to make bacon brownies for a couple of days because bacon and chocolate… what’s not to love!?

I may or may not be on quite the bacon kick as of late, and because of my love of bacon, the amount of drippings we have is bordering on obscene. David has made baking soda biscuits a couple of times now with bacon drippings and they are amazing. Once he’s perfected his recipe I’ll post it.

Now, on to bacon brownies!!

Brownies are so easy to whip up. I only use one bowl to do it and I’m not even careful about how I add stuff. While I in no way advise doing so, they are capable of being made when not entirely sober – they’re that simple.

Bacon Brownies
1/2 cup bacon drippings, melted (this would usually be unsalted butter)
1 cup cane sugar
1/2 cup unbleached flour
2 eggs
1 tsp vanilla extract
1/4 tsp salt
1/4 tsp baking powder
6 slices extra crispy bacon, crumbled

Preheat oven to 350 degrees fahrenheit. Grease an 8×8 dish. I use a glass pyrex dish, and I also used some bacon drippings to grease the pan this time around.

I usually put the sugar in the melted fat and give it a quick mix, followed by the flour, and then the eggs. Hot or warm fat + raw eggs = cooked eggs, and you don’t want that. At that point with the eggs I’ll add in the salt, baking powder, and vanilla. Wisk it all up until it’s well combined and no more flour or egg is visible.

Pour the mix into the greased pan and sprinkle the crispy bacon on top.

Bake for 35 minutes, but feel free to start checking at 30 minutes as ovens vary. Let the brownies cool. I know. I know. This is going to be the hardest part, but unless you enjoy burning your mouth, or don’t like your brownies to be set in the middle when you eat them … let. the. brownies. cool!

David, being somewhat disgusting has decided he will pair this with an egg in the morning. He tried the whole Elf thing with maple syrup on spaghetti and liked it, so his taste buds might actually be broken.
